Chicken Korma

 

Ingredients (1 serving):

- 125g chicken breast

- 200ml almond milk

- 20g ground almond

- 100g broccoli

- 100g tinned chickpeas

- 1 tsp ground ginger

- 1 tsp mixed herbs

- 20g pataks korma paste

 

Method

 

1. Cut the chicken breast into chunks/strips and fry off on a medium heat (2.5 mins)

2. Add chickpeas and broccoli and continue to cook on a low-medium heat for a further 2.5 mins

3. Then add the rest of the ingredients and mix well. Leave to simmer on a low-medium heat for 20 mins mixing regularly.

You may need to add water or more almond milk through this period if the mixture begins to evaporate too much

 

*Can be eaten on it’s own or with your choice of carbohydrate. Brown rice/basmati rice are great options if you’re looking to keep carbs fairly high. Good lower carb choices would be quinoa, bulgur wheat or cauliflower rice.

Steak Fajitas

 

Ingredients (1 serving):

- 2 medium fajita wraps

- 150g beef steak strips

- 70g diced red onion

- Handful of spinach

- 50g sliced mushrooms

- Walden Farms BBQ sauce

 

Method

 

1. Brown off the steak strips in a pan with salt and pepper

2. Add diced onion and mushrooms and leave on medium heat for 5 mins

3. Heat wraps for 6-10 seconds in microwave to make even more pliable 

4. Add fajita mix to wraps and distribute spinach evenly

5. Finish with as much Walden Farms BBQ as you like as its next to no calories!

6. Wrap up and enjoy!

 

* If you really want to ramp the carbs up and make it more of a burrito, add microwaved rice and take out the spinach to allow room to do so!
